Apple-ginger muffins! With walnuts! I committed many errors against
lesstraveled's lovely recipe, so they're more like misshapen and gingery apple-walnut lumps with a bit of muffin vaguely holding them together, but they're delicious lumps. Next time I'm going to use even more whole wheat flour, because these (a 2:1 white/wheat ratio) don't have that wheaty brown taste or texture at all, and I actually enjoy that taste in controlled amounts (and I also enjoy fiber). Possibly because I used white whole wheat? It is a mystery. They also contain apples (obviously), applesauce, carrots, and no butter or oil. Along with a handful of olives and a glass of 2% milk, they will make very fine breakfasts.
